Nothing will fill you more with trepidation than when you eat your first nettles! Fortunately cooking completely destroys the sting! They have an earthy flavour reminiscent of slightly bitter spinach. Steaming for 4 - 5 minutes is best with the nettles seves with a knob of butter and squeeze of lemon. Nettles with the help from chopped spring onion cream nutmeg and Parmesan cheese make an excellent quiche. Can also be made into an emerald green pesto and combine well with Feta cheese.
